Mine was still pourable but very thick so the cold of the ice cubes made it solidify into a solid glob and no amount of shaking made it dissolve. This is very tasty but if your honey isn't completely liquid, you should melt it first. Great for my mild sore throat and cold on a cold, Winter night However, orange juice and honey can be a game-changer if youre open to the alternative. Since rum is already sweet, it pairs perfectly with honey and lemon, so you dont necessarily have to change anything about the recipe. Used Eagle Rare Bourbon and it was very smooth, a little sweet and lemony. Use Rum - Biscane is a non-alcoholic rum offered by Seir Hill, and it also changes the game when making a Gold Rush cocktail. Not long enough to really heat it but long enough to make is very loose. I put the honey in the microwave for 20 seconds. bourbon (or rye, which is my preference), shake over ice and serve on the rocks with a lemon twist. To make dissolving the honey easier, I use honey syrup, which can be made up to a few days in advance (mix equal parts honey and water and heat to dissolve). These are delicious-one of my favorite cocktails when the weather cools. A 1:2 water:honey works just as well for making sure you get the best honey flavor without it turning into a glob as soon as it hits the shaker ice. Although I would like to add that it does not have to be a 1:1 ratio of water:honey. You could even simply stir if you wanted to. I combined equal parts honey, water and lemon juice and then the drink was a breeze to make. Otherwise the honey gets cold and clumps at the bottom of your shaker. But you absolutely need to make some sort of honey syrup for this drink to work. So delicious, even if you aren’t a huge fan of bourbon. Worked like a charm - it mixed really well. Really great combo - really liked it! I knew the honey clumping from the ice would be an issue, so I just mixed the liquids first and THEN added the ice to the shaker. Anyone know who makes them or where i can buy? I used a habanero honey (wife requested) which obviously makes the drink spicy but not overly spicy. This is great! I heated up the honey just slightly, as someone suggested, to make mixing easier.
